Reine de Pomme

Description

Name translates to “queen of the apples”. This is one that is strictly for cider, sweet or fermented, to add a tannic profile without increased acidity. Classic bittersweet. Trialing fair in northern Vermont, it is one best suited to warmer climates. Here too the fruit is quite small and the trees tending to small. In most locations the tree will be vigorous. Strongly biennial. The flavor is powerfully tannic, so a little goes a long way, a hint to its merit in ciders. Can be used in sweet ciders as well, but as less a portion of the volume, adding complexity and mouthfeel. At least as old as the first decade of the 1900s in France.
