Mcintosh X delicious, firmer sweeter and subtler version of mac with better storage.
In our root cellar 33-45 flux and humidity too high, empire has kept well into March. Specifically, they remain plump (little or no shrinkage) and excellent for sauce and other culinary uses. They are less enjoyable for fresh eating, juicy but too mealy.
